Millets recipes can be very versatile and can double up as a palate-pleaser while keeping it nutrition dense and filling.  This spicy Indian millet recipe for a rainy evening snack is ideal to nibble on as it is packed with insoluble fibre, zinc and iron to keep your digestive system healthy. The added veggies make it a pinch more attractive for parents looking to pack a punch of extra nutrition.

VARIATIONS OF MILLET RECIPES:

Note: This recipe contains cabbage, but you can add any veggie of your choice. Popular choices are cauliflower and spinach for kids. Adults can use onions and chillies too.

WHAT YOU NEED FOR THE VEGAN MILLET RECIPE (MILLET CRISPIES):

 

Little millet ½ cup

Pearl millet ½ cup

Bengal gram ½ cup

Red chillies 5 nos

Salt to taste

Shredded cabbage ½ cup

Oil for frying

HOW IT ALL COMES TOGETHER:

– Soak the millets and Bengal gram dal separately 5 to 6 hours

– Grind the pearl millet and chillies coarsely

-Add little millet and grind to make a coarse paste.

-Add the dhal grind to blend

-Mix shredded cabbage

-Heat oil, drop the paste as for pakoda

-Fry till golden brown.
