Toddlers are always hungry! They prefer having small portions but more frequently. Having some healthy snacks handy is always a blessing. These yummy bite size balls have the goodness of fibre, nuts and fruit. More so, they are so quick and easy to put together and require no cooking. It is a super simple recipe and a great way to involve your kids in the kitchen.
WHAT YOU NEED
- 1 katori powdered oats
- 1 katori desiccated coconut
- 1/2 katori powdered almonds and cashewnuts.
- 1 tablespoon chia seeds
- 2 tablespoons mixed dried berries ( kishmish, blueberries, cranberries) cut into small pieces
- 4-6 dates ( puréed)
- 1 fresh mango pulp ( sweeter varieties of mango like Alphanso would work best)
PUTTING IT ALL TOGETHER
1. Boil the dates for 3-4 minutes till they soften. Once it reaches room temperature, grind it in a mixer till you get a smooth thick paste.
2. In a bowl, add in all the dry ingredients first. Start with the powdered oats followed by the desiccated coconut, nuts powder, chia seeds and chopped berries.
3. To this mixture, add the dates puree and the mango pulp.
4. Give it a good mix with a spoon till the entire mixture comes together.
5. If the mixture seems too dry, add some of the dates puree/ mango pulp. If it seems to wet, add in some desiccated coconut.
6. Refrigerate the mixture for 5-7 minn. Roll it into bite size balls and cover with some desiccated coconut.
7. Store in an airtight container in the refrigerator for 3 days.
It is yummy and is a super easy on- the- go snack too. Rolling then into bite size balls makes it easier for toddlers to self feed.
- Dry fruits are known allergens. Please introduce each individually first, in the first half of the day before mixing them together.
- If you don’t have dried berries, your can skip them or instead replace with prunes or black rasins.
