As the rains continue, so does our love for corn. This week we have used corn for a fun snack that is nutritious and very easy to put together, and a very Indian and kid-friendly twist to regular corn recipes. And yes- don’t forget to let your little ones help you make it!
Making of Corn lollipops
WHAT YOU NEED :
-1 bowl of boiled corn
– 1 bowl grated boiled potato
– 1 small carrot ( grated)
– 1 small bowl of pumpkin ( grated)
– 1/2 bowl coriander
– Garlic (3-4 pods)
– Ginger
– 1 tablespoon rice flour
– 1 tablespoon all-purpose flour
– 1 tablespoon mixed dried herbs
– 1/2 tablespoon jeera
– Salt to taste
– Ghee

PUTTING IT ALL TOGETHER:Â
1. Heat some ghee in a pan. Add the ginger, garlic and jeera. Let it cook for a minute and then add the boiled corn and stir it around. Cool for another 2 minutes and then leave it to coolÂ
2. Transfer the corn garlic mixture along with coriander to a mixer and churn it. Do not add any additional water.
3. In a separate bowl add the grated boiled potato. To it add the corn mixture, grated carrot, pumpkin, mixed dried herbs and salt. Mix everything together until well combined.
4. Next, take some ghee in your palms and grease them well. Roll the mixture into small balls, tikkis, fingers or any shape of your choice.
5. Cook on a tawa with ghee. Alternatively you can choose to drop fry it too.
6. Serve warm with a dip of your choice.
Additional notes:
*The grated vegetables can be varied as per your choice.
*Can add chili flakes for older kids.
*Salt to be used only if the kid is over 1-year-old.
